8 medium squid tubes
200gms raw prawn meat, chopped
200gms pork mince
1/2 cup of chopped pistachio nuts
1 red onion, finely chopped
3 cloves garlic, crushed
1 red chilli, deseeded and finely sliced
bunch of coriander, chopped
1/4 cup breadcrumbs
2 eggs
Clean squid tubes. Combine all other ingredient and stuff tubes, making sure you do not over stuff as the stuffing will expand. On BBQ grill, high heat sear tubes to give some colour, then finish in oven, approx 30 mins, until cooked in the middle.
Serve cut in half and with sweet chilli dipping sauce, garnish with coriander and lemon.
