Recipe for Thai Chicken Balls

500 gms chicken mince
2 stems of finely chopped lemon grass (white part only - prepared lemon grass in a jar can be used)
2cm piece of root ginger,  finely chopped (ginger in a jar can be used)
Salt and pepper
Fresh coriander
1 egg

Mix all ingredients together form into balls and refrigerate for 2 hours before cooking in the oven or frying pan.

Serve with sweet chilli sauce.
