1.5 kg piece of rump
Large bunch of Fresh garden herbs
Salt pepper
4 tablespoons of Oil
2-3 cloves Garlic
Chop garlic add pinch of flaky sea salt and freshly ground pepper and mix with the oil. Rub over the piece of rump. Gather your herbs and arrange them over the top of your piece of rump and secure with string. Cook on medium heat for 1 hour. A fresh bunch of herbs can be attached for serving.
